- 200g noodles (egg noodles, ramen, or rice noodles work well)
- 2 tbsp sesame oil
- 2 cloves garlic, minced
- 1 tsp ginger, minced
- 1 small carrot, julienned
- 1 red bell pepper, thinly sliced
- A handful of bok choy or spinach
- 2 green onions, chopped
- 1 tbsp sesame seeds (optional, for garnish)

- 2 tbsp soy sauce
- 1 tbsp oyster sauce (or vegetarian stir-fry sauce)
- 1 tbsp hoisin sauce
- 1 tsp rice vinegar or lime juice
- 1 tsp sugar or honey
- Β½ tsp chili flakes or sriracha (optional)

- Cook noodles according to package instructions. Drain and rinse with cold water. Set aside.
- Heat sesame oil in a wok or pan on medium heat. Add garlic and ginger; stir-fry for 30 seconds until fragrant.
- Add carrots and bell pepper. Stir-fry for 2β3 minutes until slightly tender but still vibrant.
- Toss in bok choy/spinach and cook for another minute until wilted.
- Add the cooked noodles to the pan.

- 2 tbsp soy sauce
- 1 tbsp vegetarian oyster sauce or mushroom sauce

- 1 tbsp sriracha or sambal oelek (adjust to taste)
