Indonesian food is colourful, aromatic and full of character. Across thousands of islands, every region has its own ingredients, cooking traditions and favourite dishes. From rich rendang and comforting bowls of soto to spicy sambal and golden fried snacks, Indonesian cuisine offers an extraordinary variety of flavours.
What makes Indonesian food special is the balance of sweet, salty, spicy, sour and savoury tastes. Garlic, shallots, chillies, turmeric, ginger, galangal, lemongrass and kaffir lime leaves create layers of flavour, while coconut milk, palm sugar and kecap manis bring richness and sweetness.
